Prawn tartare, green apple, ‘burrata’ soft cheese and celery and lime sauce
Marinated locally caught amberjack, guacamole, sweet and sour onion jelly, aromatic mixed salad and puffed tapioca
Risotto of Carnaroli rice, champagne, cooked and raw scampi and plankton
Tortelli with buffalo ricotta filling, Locally caught small squid, artichokes and slivers of grey mullet bottarga
Slowly cooked catch of the day, lemon sauce, grilled lettuce
