When Chef Guiseppe Mancino gained his second Michelin star in 2014 he was Italy’s youngest chef to do so, and he made Il Piccolo Principe unique in Versilia.

Chef Mancino is an artist and porcelain is his canvas. Bright tomato red and vibrant basil green are in his DNA. He dreams in technicolour, and colour is often his inspiration, a purple aubergine can become a medley of extraordinary textures and flavours. Having travelled frequently to Asia Chef Mancino integrated the deftness and aesthetics to his Italian traditions. The results are refined and sensational.

GREEN HEART

Mancino was an early champion of farm to kitchen ethos and a biodynamic garden is the ‘green heart’ of the restaurant. He is aware of his responsibility as a Michelin starred chef to commit sincerely to sustainability. His respect for the raw ingredients is abundantly clear in the fresh flavours and natural textures which are his signature.
